i had another snow day on thursday of this past week.
husband had to go to work.
so, after we spent 3 hours digging our cars out of the snow,
he went to work. and i took a nap.
when i woke up, it seemed like a scone day.
i adapted this recipe from our good friend, martha stewart.
it's a good thing.
raisin and oat scones
3/4 cup flour
3/4 cup whole wheat flour
2 tsp baking powder
1/2 tsp salt
3 Tbsp packed dark brown sugar
1/2 cup rolled oats
1/2 cup raisins (I used a little more!)
2 good tsp flax seed (yum!)
3 Tbsp coconut oil
1 large egg, lightly beaten
1 cup yogurt or buttermilk ( i used yogurt, with a little bit of milk)
preheat oven to 400 degrees.
whisk together your dry ingredients.
in another bowl, whisk together your wet ingredients.
add wet mixture to flour mixture.
stir until batter is evenly moistened. do not over mix.
spoon out by 1/3 cup fulls onto parchment paper covered baking sheets.
bake for 15 minutes, or until golden brown.
cool your scones for five minutes...then enjoy!
i took these scones into my office, and they were gone really fast!
and i got tons of compliments on them.

Those are some incredible snow pictures! I just looked at the snowfall data and Bridgeport, CT has had 54.4 inches of snowfall so far this winter (42 inches in Jan). Normal snowfall for ENTIRE winter is 24.4 inches. And you still have Feb and Mar to go. Nothing like global warming.
